Area-based scaling assumes similar pan depth and desired batter depth. For different depths or unusual pan shapes, compare usable volume instead.

Prefer weight when repeatability matters

Mass↔volume estimates depend on ingredient density and measuring technique. Pan substitutions can also change bake time and browning even when volume ratios match, while fermentation timing depends on temperature and dough conditions rather than one percentage alone.

Choose area or usable-volume scaling

Area is appropriate only when fill depth is comparable. Different depths can now be compared by straight-sided usable volume instead of hiding that assumption.
